What Makes a Good Weeknight Recipe

A weeknight recipe is a set of instructions you can follow while you are tired. It is not a shorter version of a weekend project. If the method needs a special shape of pasta, a sauce cooled to a precise temperature, and a garnish cut into matchsticks, it can still be a good recipe. It is not a good Tuesday recipe.

The time is honest

Prep and cook should be separate, and both should include the boring parts. Washing the pan is not in the time, but finding a cutting board is. "Fifteen minutes" that assumes pre-chopped onions and a pot of boiling water is a different dinner from the one you will actually cook. On this site the pasta recipes include the boil. The fried rice recipe assumes the rice is already cold. That assumption is written down, because it changes the night.

Servings matter for the same reason. A recipe for two that you stretch to four without more pasta will feel small, and you will think you cooked it wrong. The amounts here are for about four, except the fried rice, which is written for three because leftover rice rarely shows up in a perfect four-person pile.

The steps are in the order you will do them

Salt the water. Start it. Then slice the garlic. A recipe that lists garlic prep as step one and the water as step four trains you to stand still. Overlap is the whole trick of a short dinner. A good card says what can happen while something else heats.

It also says when to taste. Not as a mood. As a step, after the sauce has simmered or the beans are hot. Food changes in the pan. Salt added at the start is not always enough at the end, especially with potatoes and tomatoes. A recipe that never mentions tasting is hoping you already know.

Substitutions are specific

"Use whatever vegetables you like" is friendly and almost useless. Kale for spinach is a real swap. Frozen peas for spinach is a real swap, with a note to add them later so they do not turn olive and sad. Chicken for beans is a real swap only if you also change the time, because raw chicken is not a can of beans. A good weeknight recipe names the swap and the catch.

The same goes for the missing lemon, the missing cream, the missing fresh herbs. A teaspoon of mild vinegar is not a lemon, but it is a direction. Dried herbs in a smaller amount are not a handful of parsley, but they belong in the oil early, not on the plate at the end. Those details are the recipe. The title is just how you find it again.

You can tell when it is done

Doneness should be something you can see or taste. Pasta that is tender when you bite it. Chicken that is cooked through, not pink in the center. Rice that is tender and not sitting in a puddle. Potatoes that yield to a knife. "Cook until fragrant" is fine for garlic and useless for a meal. Fragrance happens in a minute. Dinner takes longer than a smell.

Leftovers belong in the card too, in plain language. How long it keeps. Whether you need water to reheat it. What not to leave on the counter. A weeknight recipe that feeds you once and confuses you the next day is only half written.

If a recipe does those four things, you can cook it on a tired night and trust the result. The food does not have to be fancy. It has to be the food the instructions described.
